Pentru sos se spală roșiile, se îndepărtează cotorul și semințele, se taie roșiile în cubulețe foarte fine.   • Aranjeaza legumele prajite la wok pe platou sau farfurie, peste fileul de somon si orneaza cu frunze tocate de coriandru, ceapa verde taiata julienne, seminte de susan, togarashi si langa un sfert lime.

Brine salmon with Dutch sauce and greens

1. Heat a large bowl and add the bay leaves, wine or vermouth, soup, squeezed lemon & ndash and the shells added to the bowl & pepper. Bring to the boil and simmer for 5 minutes. Add the salmon with the skin down and simmer for 5 minutes. Cover the bowl with a lid or aluminum foil, turn off the flame and let it sit for 10 minutes, until the fish penetrates. Drain the liquid and let the fish sit in a warm place, covered with foil and towel.

2. To prepare the Dutch sauce, in a bain-marie bowl, rub the yolks with 2 tablespoons of lemon juice. Add a cube of butter and mix until incorporated.
